I’m Mercedes and I’m a twenty something, veggie loving, two time cat mom happily married to my soulmate of a husband.

I work as an engineer in Pittsburgh, pretending to be an adult and spending a solid 20% of my time trying to remember to not reply all.

I wanted a platform to share my wealth of equally positive and negative experiences as I attempt to navigate my twenties, and maybe get a little preachy here and there about veganism, mental health and LGBTQ+ rights.

15 Minute Chocolate Chip Pancakes


Most weekends, Jesse and I deem Sunday as our lazy day. We try to do the minimum amount of movement possible. In fact, the most movement I do all day on Sundays happens between 9:00 and 9:15 AM when I am slaving away in the kitchen making the best ever vegan chocolate chip pancakes. A Sunday tradition and weekly favorite in our household.

I use Blue Diamond Almond Breeze Almond-Cashew Blend Mlk and Enjoy Life Semi-Sweet Chocolate Mini Chips, but of course you can use other varieties of milk and chocolate chips if you’re not following a vegan diet.

If you are actively living a vegan lifestyle or considering starting, and you are living with or cooking for a non-vegan, I got you covered. My fiancé, Jesse, is as far from vegan as you can get. A typical day of eating for him consists of eggs and bacon for breakfast, a turkey and cheese sandwich for lunch, and steak for dinner. Therefore, because I do most of the cooking here, the majority of my recipes can be adapted to either style of eating! With many vegan recipes, you can simply add a non-vegan protein (like adding chicken to my spaghetti squash recipe). But in this case, I can almost guarantee your non-vegan eaters won’t even notice the lack of dairy!

15 Minute Chocolate Chip Pancakes


  • 1 Cup whole wheat flour
  • 1/4 Teaspoon salt
  • 1 Tablespoon baking powder
  • 1 Teaspoon cinnamon
  • 1 Cup almond milk
  • 3 Tablespoons maple syrup (I use sugar free)
  • 1 Teaspoon vanilla extract
  • 2 Tablespoons mini chocolate chips
  • Cooking spray



  • Electric griddle (or you can use a pan on the stove!)
  • Whisk
  • Medium mixing bowl
  • Spatula



  1. Add the first four ingredients to your mixing bowl and combine with a whisk.
  2. Add the milk, maple syrup and vanilla. Use whisk to mix until smooth (don't over mix!).
  3. Let sit for 10 minutes. While batter sits, turn electric griddle to 250⁰ F.
  4. Add the mini chocolate chips to the batter and use spatula to gently fold chips in.
  5. Spray the griddle with cooking spray and use spatula to spoon batter onto griddle; should form 4 good size pancakes.
  6. Let sit for 1-2 minutes, then flip.
  7. Let sit for another 1-2 minutes and remove.
  8. Drizzle with approximately 1/4 cup syrup per serving and enjoy!
